Instructions
STEP 1
Place cornflour in a jug. Gradually blend with water. Add soy sauce, honey, and ginger, and stir to combine. Set aside.
STEP 2
cook the rice.
STEP 3
Used cooked chicken OR: Heat oil in a large non-stick frying pan or wok over high heat. Add chicken and stir-fry for 2 minutes.
Reduce the heat slightly, then add carrot, broccoli, and capsicum; stir-fry for another 3 minutes. Finally, add green onions and garlic and stir-fry for an additional minute.
STEP 4
Stir the honey soy mixture from Step 1, then add it to the frying pan. Simmer for 2 minutes, stirring until the chicken is cooked through and the vegetables are tender-crisp.
Serve with rice and garnish with extra green onions.
