Grannies Scone Recipe

INGREDIENTS

  • 3 Cups self raising flour 
  • 1/2 cup thickened cream
  • 1 cup milk
  • 1 egg (best at room temperature)
  • 1 tablespoon white sugar (optional)
  • Pinch salt (optional)

METHOD

  • Put egg, cream, milk, sugar and salt in a medium size mixing bowl.
  • Stir together well.
  • Sift the self-raising flour on top and fold into the mixture. Keep folding the mix until it formas a round lump.
  • Tip out onto a floured board.
  • GENTLY knead the mix with floured hands, GENTLY flattening with hands or floured rolling pin to the thickness required - about 1 to 1.5cm.
  • Flour the cutter* you use and cut out up to 12 scones.
  • Place scones on baking tray lined with baking paper.
  • Preheat the oven to 215ºC. As you put the scones in turn the oven down to 210 ºC
  • Check for a light browning after 10-15 minutes.

*My scone cutters are 6-7 cm across
